My friend Sarbani reads the newspaper one a week. Blessed with the ability to absorb and retain, she knows it all. She has traveled less than I have but she is a classic example of one who travels with her books. Baked Alaskan to the Alaskan husky, she can tell you what you need to know about the US Northwest extremity.
She shared a cook book with cookie recipes with me. She picked it up on a work trip in Singapore. I tried quite a few of those recipes and tweaked some too. This one is a tweaked one using peanuts for the crunch.
My food word for this recipe would be zesty.
When you go out shopping look for:
Butter
Brown sugar
Egg
All purpose flour
Oats
Baking powder
Cinnamon powder
Nutmeg powder
Orange
The recipe would be:
Pre heat your oven. And line the baking tray with baking paper.
Beat one hundred and twenty gms butter and one hundred and fifty gms sugar in a mixing bowl together till creamy. Beat an egg. Add to the above bowl. Stir well with a spatula.
Grate one and a half oranges with skin to get zest. Mix one hundred and fifty gms flour, one tsp baking powder, half tsp cinnamon, half tsp nutmeg and orange zest together. Then add this to the butter mix. Blend smoothly. Add half a cup of coarsely chopped unsalted peanuts and half a cup of oats. Gently mix all together.
Take tsp size portion in hand and shape into round balls. Place balls on baking tray. Take another half cup of the same peanuts and chop them coarsely. Sprinkle on the cookie dough.
Bake for fifteen mins or so until golden. Cool on a wire rack.
It is crunch time folks!
