A while back Mahesh was visiting. He teaches English to Italians in Bologna and visits India at least once every year. We always make it a point to catch up. He shares some very eclectic experiences based on his life of eleven months. Come August every year we look forward to Mahesh’s visits. Besides bringing good conversation to the table he also is eye candy material steeped in understated style. One lovely lush monsoon day we met up at the Talwar country home, cooked together and it was one of the best days of my life.
My food word for this recipe would be springy.
When you go shopping look for:
Baby potatoes
Dill
Lemon
Extra virgin olive oil
Sugar
Pepper
Salt
The recipe would be:
At first you need to take a bunch of dill. Make the dressing with lemon juice, extra virgin olive oil, salt, sugar and pepper. Take about two tbsp each of lemon juice and olive oil. Add in a tsp of sugar and a tsp of freshly ground pepper. Add a bunch of chopped dill. Season with salt and keep the dressing ready.
Boil potatoes and skin them. In warm liquid butter toss the potatoes for a min or so. While they are warm toss them with the dressing. Serve at room temperature. Slightly warm is also nice.
