Today is Valentine’s Day 2020. Honestly, it makes no difference to my life. It never really did. Once we got married, both heaved a sigh of relief at our individual nonchalance at this designated lovers day. But these days something pretty warm is happening. I get really reassuring messages from girlfriends on February 14th. Now, this I really warm up to. This makes me happy. This makes me want to bake cookies and share the recipe. Just a simple walnut cookie it is which is comforting, it is reassuring.
My food word for this recipe would be nutty.
When you go out shopping look for;
Butter
Castor sugar
Egg
Vanilla extract
Walnuts
Raisins (optional)
Plain flour
The recipe would be;
Take forty walnuts and halve them. Next take one hundred and ten gms finely chopped walnuts.
Use very fine castor sugar; you will need one hundred and ten gms. Beat one hundred and fifty gms of soft butter and the sugar until both mix well. You will get a creamy texture. Take one egg at room temperature. Separate the egg yolk from the white. To the above creamy mix beat in the egg yolk, one tsp vanilla extract, chopped walnuts and flour till everything combines. At this stage you could include a handful of raisins but this is entirely as per choice. The dough is ready, please wrap in cling film and allow it to stay for two hours.
Heat the oven to one hundred and sixty degrees C. Line the trays with baking paper. Roll the dough to get forty dough balls. Place on baking tray. Press the half walnuts on each dough ball.
Bake for twenty minutes until golden. Place the tray on a wire rack until the cookies cool.
