I love that Engish film called Holiday. What I like about it the most is that I see myself comfortable in Kate Winslet’s English country setting as equally as I see myself in Cameron Diaz’s suave LA ambience. I could happily agree with both lifestyles. I could be prettily rustic as much as I would be posh city like. My imagination about myself in both worlds makes me very comfortable and therefore happy with myself. And guess what, in both those life dimensions I would fix myself this brandy onion jam and help myself to the crackers in their kitchen larders. Oh, one prep up would be that I would rustle up the jam two days before for it to reach the best flavour and body. What I am trying to say is that this jam poses a very universal appeal and it adapts to any mood and moment.

When you go out shopping look for;
Red onions
Salted butter
Castor sugar
Brandy
Pepper
Chilli flakes
Balsamic vinegar
The recipe would be;
Coarsely chop four large red onions to make a hundred ml jar of jam. In a wok melt seventy five gms of salted butter. To this add the onions and toss them around until they turn pink. Now add a tsp pink salt, a tsp of chilly flakes, a generous pinch of pepper and two tbsp of castor sugar. Stir well and add two tbsp balsamic vinegar and a cup of brandy. Allow the onions to soften in the brandy, it takes three to five minutes. The consistency should be soft and thick, not as thick as a regular fruit jam, more like a relish.
