When coffee shops became a culture in India, cookies became an eating phenomenon among adults. Children by then had learnt to eat cookies, a tempting sweet biscuit often spotted in their story books and television episodes. As such cookies are not an Indian gastronomical concept at all. With a medium sized cappuccino came a free cookie which was often had with a hidden urge for a second, but our culture has taught us to not be greedy about freebies. Then came specialty cookie stores in malls which were irresistible thanks to their aroma if you happened to be on the same floor. There we learnt to buy cookies to take home and have with our evening coffee or midnight tea. Many homes began to rummage through recipes of cookies which probably made twenty at a time, eighteen of which the family kid and her friend called dibbs on, and two were sneaked away for the adults to savour over a quiet almost romantic beverage moment.
For that romantic moment and because it is the Christmas month, I am sharing a cranberry chocolate cookie recipe.
My food word for this recipe would be lovely.
When you go out shopping look for;
Unsalted butter 200 gms
85 gms brown sugar
85 gms caster sugar
1 egg
225 gms flour
1 level tsp baking powder
100 gms plain chocolate
85 gms dried cranberries
Butter paper
The recipe would be;
Heat the oven to 200 degrees C. Line two baking trays with butter paper. Beat the egg. Beat the butter and sugar in a mixing bowl until light and creamy. Chop the chocolate roughly. Stir in the chocolate along with the remaining ingredients and fold them well until smoothly blended. Spoon about twenty heaps of the dough onto the baking tray spacing them well apart. Bake for fifteen minutes until just golden. Cool on the baking trays for a few minutes. Place on a wire rack to cool completely.
